imperfect smooth wall texture

I’ve just moved to northern Utah from Wisconsin… here I have smooth plaster walls (it’s an older house) but in Wisconsin I had old world texture- I thought wall textures kind of went with trends over time? I’m also in Utah but in northern Utah.
